Ingredients required:
- 1/2 tsp. brown sugar
- 1/4 tsp. cumin
- 1/4 tsp. coriander
- 1/4 tsp. garlic powder
- 1/8 tsp. cinnamon
- 1/8 tsp. salt
- 2 4-ounce salmon fillets
- 2 cups frozen chopped spinach, thawed (or 2 cups fresh)
- 2 tsp. pine nuts, chopped
- 4 tsp. crumbled feta cheese
- 1 cup cooked whole wheat couscous
Instructions:
Preheat oven to 375°. In a small bowl, combine first 6 ingredients. Rub over both sides of salmon; place on a baking sheet coated with cooking spray and bake for 15 minutes or until cooked through and fish flakes easily when tested with a fork. Meanwhile, heat a nonstick skillet coated with cooking spray over medium heat. Add spinach and cook until warmed through, about 2-3 minutes. Toss spinach, pine nuts, and feta cheese with couscous until combined.
Serve salmon on top of couscous.
