Ingredients required:
- 6 cups mixed greens
- 1 apple, peeled and chopped (Granny Smith or Gala)
- 4 tbsp. Feta or Bleu cheese
- 1 1/2 cup chopped cooked beets, such as Melissa’s
- 2 tbsp. orange juice
- 2 tbsp. white wine vinegar
- 2 tbsp. chopped shallots
- 1 1/2 tbsp. canola oil
- 1/4 tsp. black pepper
Instructions:
Combine greens, apple, cheese, and beets (such as Melissa’s, or roast your own at 425° for about 45 minutes) in a medium bowl. In a small bowl, whisk together orange juice, white wine vinegar, shallots, canola oil black pepper. Drizzle over salad and toss well to coat.
