Ingredients required:
- 2 teaspoon sesame oil
- 2 cup broccoli
- 1 cup sliced red peppers
- 1 cup sliced yellow squash
- 3 garlic cloves, chopped
- 6 tablespoons orange juice
- 1 1/2 tablespoons low-sodium soy sauce
- 1/2 teaspoon red pepper flakes
- 2 teaspoon chopped fresh ginger (or 1/2 teaspoon dried ginger)
- 6 ounces extra firm tofu, cubed
- 2 cups hot cooked brown rice
Instructions:
Heat oil in a nonstick skillet over medium high heat. Add broccoli, peppers, and squash and sauté until tender, about 4 minutes. Add garlic and next 4 ingredients and cook 1 minute. Stir in tofu and cook 2 minutes or until heated through. Serve over rice.
