Ingredients required:
- 1 cup sliced sweet onion
- 1 cup sliced red bell pepper
- 2 portobello mushroom caps
- sliced 2 tbsp. balsamic vinaigrette
- 2 veggie burger patty (I used Boca Cheeseburger to analyze)
- 2 whole wheat hamburger roll
- 2 tbsp. light mayonnaise
- 2 tsp. spicy mustard
Instructions:
In a medium skillet coated with cooking spray, sauté onions, pepper, and mushroom until tender, about 5-7 minutes. Remove from pan, drizzle with balsamic vinaigrette, and set aside. In the same pan, add the veggie burger and cook, turning once, until heated through (about 8-10 minutes).
Spread hamburger roll evenly with mayonnaise and mustard. Top each with one veggie burger, then half of the vegetable mixture on top.
