This is a great vegetarian entree, but it can also be used as an easy side dish.
- 2 cups cooked whole wheat couscous
- 1 cup canned canellini beans, rinsed and drained
- 1 cup chopped tomato
- 3/4 cup marinated artichoke hearts, drained
- 1/4 cup lemon juice
- 2 tsp. olive oil
- 3 tbsp. chopped fresh basil
Combine couscous with beans, tomatoes, and artichoke hearts.
In a small bowl, combine remaining ingredients, and drizzle over the couscous mixture, tossing to coat. Serve warm or cold.
