Buy pre-cut pineapple and mango from the salad bar or produce department to cut down
on chopping time. Canned pineapple will also work in this recipe. This is great alone, or
paired with grilled pork, chicken, or fish.

Ingredients required:
- 3/4 cup chopped fresh or canned pineapple
- 3/4 cup diced mango
- 1/4 cup chopped red onion
- 1 garlic clove, chopped
- 1/4 cup lemon juice
- 2 tbsp. olive oil
- 1/2 tsp. hot sauce
- 1 tbsp. chopped fresh mint
- 1/4 tsp. salt
- 1/4 tsp. black pepper
Instructions:
Combine all ingredients in a bowl and mix well. Store covered in the refrigerator until
served.
