Ingredients required:
- 2 tbsp. lime juice
- 1 tbsp. tequila
- 1/4 tsp. hot sauce
- 2 tsp. olive oil
- 2 tsp. chopped fresh cilantro
- 1 clove garlic, chopped
- 1/4 tsp. salt
- 8 oz. scallops
- Cooking spray
Instructions:
Combine all ingredients except scallops in a small bowl, stirring to combine. Add scallops and marinate in the refrigerator 15 to 20 minutes.
Remove scallops from marinade, reserving 2 tablespoons of the liquid. Heat a large skillet coated with cooking spray over medium-high heat; add the scallops and cook 1-2 minutes on each side or until opaque and firm. Add remaining 2 tablespoons of marinade to the pan and cook and additional 1 minute or until bubbling.
