If your local grocery store doesn’t carry peeled and deveined shrimp, ask the seafood counter to do it for you.
Ingredients required:
- 2 cups fresh spinach
- 2 cups broccoli florets
- 4 tsp. butter
- 8 oz. peeled and deveined shrimp
- 3 garlic cloves, chopped
- 1/2 cup white wine
- 2 tsp. lemon juice
- 1/4 tsp. black pepper
- 1 cup cooked whole grain pasta
Instructions:
In a medium skillet coated with cooking spray, sauté broccoli until tender, about 5 minutes. Add spinach and cook until wilted, about 1-2 minutes. Remove from pan and set aside.
Melt butter in the skillet. Add shrimp and cook 2 minutes. Stir in garlic and next 3 ingredients, and cook an additional 3 minutes or until shrimp is cooked through. Add vegetables to the skillet, tossing to coat. Spoon over pasta.
