Ingredients required:
- 2 tsp. sesame oil
- 1 cup sliced mushrooms
- 3/4 cup shredded carrots
- 1/2 cup frozen peas
- 1/4 cup sliced green onions
- 2 garlic cloves, chopped
- 3 cups cooked brown rice (such as Uncle Ben’s Ready Rice)
- 1 egg, lightly beaten
- 2 tbsp. lite soy sauce
Instructions:
Heat the sesame oil in a large nonstick skillet over medium-high heat. Add mushrooms, carrots, peas, green onions, and garlic, and sauté for 4-5 minutes or until tender. Stir in the rice and cook for 1 minute. Push rice and vegetables to one side of the pan. Add the egg; scramble in the pan and then toss with the rice/vegetable mixture. Stir in the soy sauce and mix until combined.
