Ingredients required:
- 2 boneless, skinless chicken breasts, about 12 oz.
- 1 1/2 cups artichoke hearts
- 1/2 cup chopped tomatoes
- 2 tbsp. chopped Kalamata olives
- 3 tbsp. chopped fresh basil
- 2 tbsp. feta cheese, optional
Instructions:
In a medium skillet coated with cooking spray, sear chicken breasts on both sides until cooked through, about 10 minutes. Add artichoke hearts, tomatoes, olives, and basil and simmer until warmed through. Top with 2 tbsp. feta cheese, if desired.
