Ingredients required:
- 2 cups chopped portobello mushrooms
- 2 cups chopped broccoli (fresh or frozen)
- 4 garlic cloves, chopped
- 2 tsp. olive oil
- 2 cups cooked orzo pasta
- 1/2 cup navy beans, drained and rinsed
- 1 1/2 tsp. chopped fresh thyme
- 2 tbsp. grated Parmesan cheese
- 1/8 tsp. each salt and pepper
Instructions:
Sauté portobello mushrooms, broccoli, and garlic in 1 tsp. olive oil in a nonstick skillet until mushrooms are tender, about 5 minutes. Toss mixture with orzo pasta, beans, thyme, and Parmesan cheese. Season with salt and pepper.
