Ingredients required:
- 1 pound 95% lean ground beef
- 1 tbsp. taco seasoning
- 2 tbsp. olive oil
- 1 cup chopped onion
- 1 cup chopped green or red pepper
- 1 cup sliced mushrooms
- 1 cup broccoli florets
- 8 small (4-inch) corn tortillas
Instructions:
In a nonstick skillet, combine beef and taco seasoning and cook, stirring frequently, until crumbled and cooked through. Drain any fat; remove from skillet and set aside.
Heat olive oil over medium-high heat. Add onion and peppers, and cook 2 minutes. Stir in mushrooms and broccoli and sauté until tender, about 5 minutes. Return beef to pan; cook until heated through, stirring occasionally.
Spoon beef mixture into tortillas and roll up.
