Breakfast Burrito

Makes 2 burritos

2/3 cup chopped green pepper
1/2 cup chopped onion
1/4 tsp. taco seasoning
2 whole eggs
2 egg whites
1 6-inch whole wheat tortillas
4 tbsp. reduced fat shredded cheese
2 tbsp. salsa

Sauté pepper and onion in a nonstick skillet coated with cooking spray until tender, about 2-3 minutes. Add eggs to pepper mixture and scramble until cooked through. Spoon evenly into tortillas, and top with each 2 cheese, 1 tbsp. salsa, and roll up.
