Orange Sesame Tofu Stir Fry


Makes: 2 servings

2 teaspoon sesame oil
2 cup broccoli
1 cup sliced red peppers
1 cup sliced yellow squash
3 garlic cloves, chopped
6 tablespoons orange juice
1 1/2 tablespoons low-sodium soy sauce
1/2 teaspoon red pepper flakes
2 teaspoon chopped fresh ginger (or 1/2 teaspoon dried ginger)
6 ounces extra firm tofu, cubed
2 cups hot cooked brown rice

Heat oil in a nonstick skillet over medium high heat. Add broccoli, peppers, and squash and sauté until tender, about 4 minutes. Add garlic and next 4 ingredients and cook 1 minute. Stir in tofu and cook 2 minutes or until heated through. Serve over rice.
