Easy Chicken Marsala


Easy Chicken Marsala

Makes: 2 servings

1/4 cup all-purpose flour
1/8 tsp. salt
1/8 tsp. pepper
2 4-ounce boneless, skinless chicken breasts, pounded to .. inch thickness
1 tbsp. olive oil
1/2 cup dry red wine
1/2 cup chicken broth
1 cup sliced baby bella mushrooms
1 tbsp. chopped fresh thyme

Combine flour, salt, and pepper in a shallow dish. Coat both sides of chicken breasts with the flour. Heat olive oil in a large skillet over medium heat. Add chicken breasts and brown on both sides. Remove chicken from skillet and set aside.

Add wine and broth to the skillet, scraping any pieces stuck to the bottom of the pan. Stir in mushrooms and cook, stirring occasionally, for 5 minutes. Add chicken breasts back into the skillet, cover, and cook 10 minutes or until chicken is cooked through and no longer pink in the center. Stir in thyme and cook 1 minute. Serve over pasta or rice.
