Sausage and Spinach Soup

Makes 4 servings

10 oz. sweet Italian turkey sausage, casings removed
1 cup chopped onion
2 cloves garlic, chopped
1/2 cup water
1 15-oz. can canellini beans, drained
1 14.5-oz can stewed tomatoes
1 14-oz. can chicken broth
2 cups baby spinach
1 tbsp. chopped fresh basil
2 tsp. chopped fresh oregano

Cook sausage in a large saucepan coated with cooking spray over high heat until browned, stirring to crumble. Add onion and garlic, cook for 2 minutes. Stir in water, beans, tomatoes, and broth. Cover and bring to a boil. Uncover and cook 3 minutes. Remove from heat and stir in spinach, basil, and oregano until spinach has wilted. Stir well before serving.
