Roasted Beet And Feta Salad

If you can't find Melissa's Roasted Beets, roast your own by placing the beets on a baking sheet and roasting at 425° for about 45 minutes.

Makes 2 servings

6 cups mixed greens
1 apple, peeled and chopped (Granny Smith or Gala)
4 tbsp. Feta or Bleu cheese
1 1/2 cup chopped cooked beets, such as Melissa's
2 tbsp. orange juice
2 tbsp. white wine vinegar
2 tbsp. chopped shallots
1 1/2 tbsp. canola oil
1/4 tsp. black pepper

Combine greens, apple, cheese, and beets (such as Melissa's, or roast your own at 425° for about 45 minutes) in a medium bowl. In a small bowl, whisk together orange juice, white wine vinegar, shallots, canola oil black pepper. Drizzle over salad and toss well to coat.
