Italian Portobello Wrap

The veggies in this easy sandwich also can double as a great side dish for meat, chicken, or fish.

Makes 1 serving

2 portobello mushroom caps
2 tbsp. light balsamic vinaigrette
1/2 cup sliced roasted red peppers
1 cup spinach or arugula
1/2 cup sliced plum tomatoes
1 whole wheat tortilla
2 tbsp. crumbled goat cheese or Feta cheese

Drizzle mushroom caps with dressing. Grill or broil until tender, about 5-7 minutes. Slice and toss with peppers, spinach, and tomatoes. Spoon into a whole wheat tortilla, sprinkle with 2 tbsp. crumbled goat cheese and roll up.
