Mediterranean Couscous (Low Sodium)

Makes 2 servings This is a great vegetarian entree, but it can also be used as an easy side dish.

2 cups cooked whole wheat couscous
1 cup canned canellini beans, rinsed and drained
1 cup chopped tomato
3/4 cup marinated artichoke hearts, drained
1/4 cup lemon juice
2 tsp. olive oil
3 tbsp. chopped fresh basil

Combine couscous with beans, tomatoes, and artichoke hearts.

In a small bowl, combine remaining ingredients, and drizzle over the couscous mixture, tossing to coat. Serve warm or cold.
